In June 2018, the new UNI EN ISO 16890:2017 regulation came into effect, bringing substantial changes in the testing methods and classification of filters from classes G to classes F (UNI EN 779:2012 regulation), used in common ventilation systems.

The UNI EN 16282 (2018) series gradually replaces the historical UNI 10339, becoming the main reference for air management in professional and commercial kitchens.
It sets requirements for:
Smoke and fume extraction: effective removal of vapors, grease, and particles;
Air ducts: design, materials, and fire safety;
Aerosol treatment: filtration and air-washing systems;
Indoor comfort: control of humidity, noise, temperature, and airflow.
Besides UNI EN 16282, other rules must also be respected:
Defines minimum air changes (≥ 16.5 L/s·m²).
Extraction must exceed supply to maintain negative pressure.
Requires bag filters with ISO ePM1 ≥ 80% in urban areas.
Noise limits: ≤ 55 dB(A).
Local exhaust ventilation is mandatory for hazardous substances.
Regular cleaning and maintenance of ventilation systems.
Odor emissions may be considered olfactory nuisance.
Civil and criminal liability in case of insufficient odor abatement.
To comply with the regulations, it is necessary to:
Install certified hoods and filtration systems;
Design an extraction system sized according to UNI EN 16282;
Integrate high-efficiency filters, scrubbers, or activated carbon systems;
Ensure scheduled and documented maintenance;
Monitor noise and air quality to protect workers and customers.
